  • How to Shell Chestnuts

    My family loves chestnuts in turkey stuffing mixed with Brussels sprouts. The best ones are fresh, not canned. But shelling them can be a challenge. Here’s what I have learned:

    And here is a short video showing my prep technique. This can be hazardous to your fingers. So never cut toward you. Let a cutting board stop the knife . . . not your flesh.

    Here’s a final tip, the shells come off and take the brown membrane with them only so long as the water is very hot. As it cools, the starch becomes thicker and more sticky bonding the membrane to the white meat of the chestnut. Boil small batches, or pour off the cooled water and replace it with boiling water from a tea kettle.

  • Hybrid Zoom for the Road

    My colleagues and I were asked to create a kit of equipment to enable Quaker Meetings in our quarterly meeting group (Bucks Quarterly Meeting) to Zoomcast the quarterly meetings. The meetings are hosted in a rotation among the several meetings. This posed a challenge because these historic buildings often have none of the services to support technology. One of them does not have electricity!

    We learned quite a lot in the process of assembling our kit. For example, we learned that a Cell Phone’s “hot spot” can support a Zoom call. Our instructions are evolving, but here is the draft and an equipment checklist. (Disclaimer: Use this to inform yourself and harvest ideas, but work up your own rather than blindly relying on what’s here.)
